Free standing stove - how to cover off old fireplace behind

Hi, I recently got a free standing stove fitted as part of a renovation job. It's in front of an existing open fireplace and is rear flue. It's fitted and working but I've been left with an unfinished job (won't bore ye with details).
Basically the builder heading up the job has not closed off the old fireplace before stove was fitted and looks like he won't be coming back to do it. I wanted to close the opening off flush with the main wall, no recess visible. Any idea how this can and should be done? Have a plasterer lined up to finish the wall off if I can get the opening covered.

Maybe a photo would explain those 'boring details'?

Sounds just like mine, actually. My man simply slapped blocks in and rendered them. In your case? Sounds like much the same and a plaster finish.

Am I over simplifying this? Or .....

Why close it off? It would need to remain open to air or condensation/damp might build up in the closed off space. You might also want to pull the stove out to clean/repair the chimney at some point.

My installer used brick cladding in the old recess before I put the stove in. Sets the stove off nicely.
