An ancient BB was taken offline by an engineer a few years ago and the gas account closed, meter box removed etc, I've removed the front fire and would like to close the space - the question I have is this - Can I just undo the water in/out and gas pipes, catch the water and tidy up and then move the unit back into the cavity so it's flush with the "breast" and then close it off for good. Or do I need to take a different approach?

There will be no heating unit of any type going in front of the current BB area.
