Best compression method and tool for raw digital

I had about 30 Digital Hi8 tapes that I captured digitally using the Firewire connection on the camera. I had about 30 Digital Hi8 tapes that I captured digitally using the Firewire connection on the camera.

The files created were absolutely massive as there seems to be no compression used in the capture. The total size of the files is about 365Gb.

What would be the best compression method (and associated tool) and parameters of same to get these onto DVDs without any noticeable quality loss? The original capture is also 2-field interlaced.
