The carpet and underlay will give off new carpet smell (a.k.a. volatile organic compounds). How long depends on what's an acceptable level of smell amongst other things. I painted (water based) and put new carpets down and 2 months later, with plenty of airing, there is still a new carpet smell. Mattress (memory foam) took 3 months before I figured it was down to acceptable levels.
