Ring and ask for any cancellations, and cancelled spots are usually added to the nct sites around midnight if you are still up.

Turning up to the test center and hoping they can fit you in is a no go.

I tried that, worked previous years and usually got a spot within a few days within the time parameters and preferred centre I gave over the phone. This year however they said due to GDPR they don't have cancellation lists and won't take your details to inform you when the cancellation comes in. You'd literally have to ring them every half hour or more to see if any cancellation came in. Great progress.

OP, you're better off trying the online site now and refreshing it fairly often. I got a spot easy enough in the end despite it initially showing the next available spot was nearly a month away.

They release the cancelled tests around 9pm each day, try looking again online then.
