So I bought web hosting with Go Daddy but whatever I bought or whichever way I set it up I have it with Plesk. I just wanted to use Wordpress to create my website but I have to go through this now. I find it to be an unnecessary layer of complexity between the hosting and the site, even setting up Wordpress in it is a hassle. How much used is Plesk? Is it industry standard or known to be buggy and unreliable? Is there anyway to get around using it or change hosting?

It is very widely used. That's the control panel for your hosting and DNS, email etc.

you dont need to use plesk to set up wordpress - you can still ftp directly into the home directory (though Plesk and Cpanel make it all easier)

Plesk is one of the more commonly used control panels.
But you don't need to use it to setup Wordpress - you can just use it to create a database and then upload files manually etc.,
It does, however, have some pretty nice tools to help you manage Wordpress
