beef suppliers or farmers

    recently started dry aging beef for myself and looking to reduce costs by cutting out the butcher



    What would be the best way to go about this? go direct to a farmer or a small suplier? I am in portlaoise - any recomendations would be great for farmer or supplier localy



    I would be looking for prime ribeye on the bone with the fat cap on - 10-15 kg peices abot once a month - maybe a few smaller cuts for roasts too

    You could try a few of the processors. I know that as a farmer you can buy boxes of striploin or sirloin form a few processors rather than killing your own. Other than that try a wholesaler . It is unlikely a farmer unless doing farmers markets will be able to sell to you. Even if you do any farmer at that will sell will be charging a premium price especially on steak cuts as these sell the fastest.

    Your other option is to do a deal with a butcher but again river's are an easy selling cut at present
