Just get a 3 mobile sim and tip up with €20 to get all you can eat data.
Use an old smartphone as a WiFi hotspot.

Get a three *PHONE* sim card. Put €20 on it. That gets your all you can eat data. Then buy a Mifi device from Amazon/Argos.

If its a popular holiday home spot it'll be dog slow.

    EDIT: Slow to post.

Use the Comreg coverage checker to identify which networks have the best 4G coverage near your home.

    https://coveragemap.comreg.ie/map

Note - according to Comreg Three have no 4G coverage at either Rosslare Strand or Rosslare Harbour. Vodafone have 4G at the Harbour, but not at the Strand. Eir have good 4G coverage at both the Harbour and the Strand. Not much point having "unlimited" if the the network you are using doesn't have good coverage.

Eir have a 50GB prepaid 30 day pass for €29.99.
