Hi, I am hoping to start the PME primary this coming september. My question is, if I am baptized church of Ireland am I eligible to work in a Catholic primary school in Ireland? I am aware of the CRS requirement, but can I even do this if I am not catholic?

    No.

No one will ask you your religion in an interview.

Bit having the certificate in religious education can be a requirement for shortlisting for the job.
