If you need more than 64Gb RAM you'll probably need to move to a HEDT platform.

Maybe try looking into older Intel X99?
You could get an i7-5930K (€170-180) and X99 ATX motherboard (€170-200) from eBay, bung on a decent cooler. Lets you use your current DDR4.

For gaming you're probably better off with GTX 1660 Ti.

The older Threadrippers have been on sale recently, you could get a 1900x or a 1920x for a decent price (around the 300 GBP on Amazon at least). The motherboards (X399) are expensive, but you can fit 8 memory sticks. You would think quad-channel will stay with HEDT for the moment, so the AM4 Ryzen 3 motherboards might not support more than 4 sticks.
