Can you get finance on a vehicle if you've no proof of your earnings? I do grass cutting and want to get a pickup on finance but I'm not yet registered as a company as I'm not long in business. I'm earning more than enough to pay back say €40 weekly over 3 years but I'd struggle to prove it.

I'd doubt it. I'd say it's a requirement by lending institutions otherwise anyone could claim they were earning x amount in order to borrow large sums without knowing if they can actually afford to repay it.

Worth talking to your local credit union, their lending criteria might be a bit more flexible than your typical high street bank.
