Best time to book package for May 2020

Can't find answer on Google so: planning a package hol in early may 2020 for 2 x adults 3 x kids to probably Lanzarote. When do these holidays become available to book?
Going package as 3.small kids so easier when transfers etc included.
It's going to cost a bit so want to make sure we get booked early so we get flights from nearest airport ( snn)

I think the problem you're going to have this early is the flights. Carriers won't have those details for some time yet.
A lot of packages now ( especially IRL to Lanzarote ) use the scheduled airlines so they may be able to give you ballpark figures on accommodation ( and even then a lot won't have prices until within 12 months or even less) but they wouldn't have flights prices. Look up AL and Ryanair and see how far ahead you can book direct. That would give you an idea of how far off May 2020 might be yet.

On transfers, Lanzarote is small. If you plan to stay in Puerto del Carmen or Costa Teguise then transfers can be booked online or even taxi at airport ( they have plenty for 5+ in one vehicle ) is short distance and quite reasonable. Playa Blanca would be further so more expensive.

May would be a lovely time in Lanzarote by the way. Not too hot for the kids but sea warming up nicely.

Some locations you can book with travel agent about 12 months in advance but that will probably be accommodation only and flights to be confirmed about 8 -10 months before hand.
Normally we book about 6 months beforehand.
Have a look at the price for this may and budget by this years price, do book as early as possible as some travel companies have free child places if booked early enough.
As with everything price goes up each year so keep that in mind as we found this year a lot more expensive than last year.

OP specifically mentioned a package holiday so transfers will be included. But even if they go independent, a taxi to Playa Blance will cost peanuts compared to the air fare for the five of them. A taxi for 4 to PDC costs about €20, Playa Blanca will be max. €30.
