Considering buying a brand new Jeep. 5year or 125k kilometres warranty is on offer. sales man basically told me that i would have to have it serviced by them at the recommended interval.

the recommended service interval i have no issues with at all.its the not being able to get it done locally with the mechanic i have always gone to is the question really.

is this the way all manufacturers warranty works?

They cannot impose such a restriction around the basic warranty. When talking about extended warranty as is the case here, I believe they can insist on whatever terms they wish in relation to the extended part of the warranty.
