I had my heart set on Metro tiles for the wall behind the solid-fuel cooker but a sales assistant informed me yesterday that Metro tiles are ceramic and are unsuitable for chimneys. And apparently there are no porcelain Metro/Subway tiles. Has anyone used Metro tiles behind a solid-fuel stove/cooker?

You can use adhesive and grout that designed to be used around stoves etc.
Normal adhesive won't last. The tiles should be okay but use normal adhesive to hold them and you'll run into problems with the heat.
I used large floor tiles around my stove as a cheaper alternative to granite and never had a problem.
