Where can a student get details of curriculum to do this or do they just buy the books and get on with it? Are there sites that can help with timing it to know what should be covered by Christmas/Easter etc to keeping track. Computer science is the subject he is thinking of and it's not taught in his school.

Computer science is only being piloted in a few schools at the moment, so not sure your son (?) would be eligible to do it at present.

The syallbus for each subject is on the NCCA website. Past exam papers are on examinations.ie

After that it's a case of getting a textbook. THere's no set order to teach any subject so the Dept of Education do not provide a timeline on how to teach a subject.

Might have to consider another subject in the meantime. If there is a project element to it, a teacher would probably have to sign off on it.
