Top Up Mortgage - receipts from 3 years ago....

I have a mortgage about 3 years in, it was self build, we had a few over runs so a few other expenses related to the build, i should have gone back and requested an increase before the final draw down but hey ho here we are. MY LTV is around 52%, i want to top up the mortgage by around €35-€40k and seriously free up disposable income and move the loans to that one payment. The bank is asking for receipts for the work related to the loans, one of these loans was a consolidation of other small loans related to the build, some of it was cash payments, and some were hand written dockets. My query is what level of detail do the banks need when they ask for receipts from 3 years ago?? I can detail to the penny where the money was spent but proving via detailed receipts will be challenging....any advice?
