I would be interested in having an app that would allow me to restrict usage, when activated, to preset apps only. Phone, messages, WhatsApp, Gmail, and a couple of others. Anyone know of something like that?

What version of Android are you on? On Pie/9.0 there's Google digital wellbeing which you can turn off apps/usage. Check to see if you can sideload it.
