Usually long runs are done in pex, tails to rads will be copper.

Piping close to boiler will be copper.

I guess they will work with copper, it'll just cost you a lot more as it's an inflexible material...going to be more soldered joints etc..a big house was just done in my town entirely plumbed with copper. But then he was a rich ads farmer 😊
Hospitals use copper because of the anti bacterial affects of the pipe....but qualpex has being used in Europe die decades without issue....some people are afraid of relying on an oring for sealing but it does the job nicely, once it 'S not under side tension.
Then again, hot water and plastic can leach out chemicals that are estrogen mimics, but it's not like sperm counts are dropping like mad over the last few decades, if you've already had kids, probably not too much to worry about. 😂

Rad tails in copper, mimiumium of a metre from boiler & cylinder must be copper also.

Ideally most of the hotpress should be copper except for where they come up out of the floor / ceiling. Should be no qualpex visible coming up to radiaters/ sinks / toilets etc.
