Having to eat a lot of chicken lately, so prepping a fair bit of it, to do me for a few days at a time.

I always eat it cold but I'm wondering is it ok to reheat in a microwave? A lot of conflicting information out there it seems.

I always do - so does my hubby.

But you should reheat it to piping and only once.

A lot of advice on food is highly simplified, with lots of presumptions. If you know the science behind it you can make up your own rules, which may not be as strict.

e.g. sous vide cooking would go against a lot of rules on temperature, since the rules presumed shorter cooking times.

Advice about reheating food seems to presume you will reheat it and have it sitting around for ages before eating it. Some can come from guidelines for the food service industry.

Right. Reheating alone is not a problem. It's what happens afterwards.
