Might sound a bit silly but does preclearance for US flights from dublin / shannon only apply for direct flights to the US ?

Looking at options on skyscanner and there are aerlingus flights operated by British Airways that go Dublin ->London->US . Can you get preclearance for these flights ?

    Cheers

I don't think so as flights from Ireland that have been precleared land in the US almost as if they were domestic flights, bypassing the controls stateside. Flights without it land outside those controls, and all passengers are subject to them. Plus, when you transit preclearance here you go into an isolated area of the airport where only US flights depart from, so there's no route from there to indirect flights.

Yes, only flights that go direct to the US. You will then be treated as a domestic flight when you arrive in the US so you grab your bag and head for the exit.

If you are travelling as a couple in one booking, are your checked bags photographed separately for US Customs?

Normally the same party travelling together clear Customs together, but this won’t be happening as I am travelling on a US Passport(non resident citizen) and my partner will be travelling on an Irish Passport and we won’t be clearing customs together as we’ll be going to different Queues

Customs and Immigration are not the same thing.

In most airports that is correct, you show your passport to an immigration official, then you collect your bag off the carousel and go through customs. But when doing US pre-clearance in Dublin or Shannon, the agent you deal with is acting on on behalf of immigration, customs and US Dept of Agriculture (USDA).

So effectively you are doing customs and immigration at the same time. And they can take food (typically meat products or fruit) from you if it's not allowed into the US under USDA regulations.
