I have lived in Hong Kong, Sydney, Toronto, NYC, Houston.

I am also one of 7 children (1 deceased) and we are spread across three countries (not Ireland)

Anyone in a similar boat? This is literally the only thing worrying me about my application. I feel like the delay will be epic. But sure I will see how I get on with stage 1 first.

Well I have none of that and my delay has been epic! Wouldn't worry about it at all!

The delay will depend on the efficiency of the police in those various countries. It's a long enough process for someone who's never lived abroad so do allow several months.

Not sure what being one of 7 children has to do with it?

I lived and worked in England for 6 years and I applied for the guards back in September 2016 and I'm still waiting for an offer to start so hopefully that can give you some sort of idea. Apply anyway though.
