BBQ meat marinades

    Summer well in now, I'm wondering what meat marinades people like to make for BBQìng?
    Or even just dips etc.

    Any tried & tested recipes going?
    Chicken, Pork, Lamb, Beef etc.

    We’re addicted to this Cajun blackened spice rub on chicken.

    1tbsp cracked black peppercorns
    2tsp paprika
    2 tsp garlic powder or crushed garlic
    2 tsp salt
    1tsp dried thyme
    1tsp dried oregano
    1 tsp mustard powder
    1/2 (half) tsp cayenne pepper.

    I tenderise minute steaks and soak them in:

    Soy Sauce
    Sesame oil
    1/4 tsp Thai spice
    Roughly cut ginger and garlic

    Overnight if I know in advance

    Might as well throw one of my own in.

    Spicy Sweet & sour.

    1 tablespoon of cornflour mix it with 1 tablespoon of water & set aside.

    In a sauce pan mix in the below:
    2/3 cup of pineapple juice
    1/3 cup of white rice wine vinegar
    1/3 cup of light brown sugar
    3 table spoons of ketchup
    1 tablespoon of soy sauce
    2 chopped chillies

    Bring the mix to the boil & turn down to a simmer, the add in the cornflour & stir.
    Let it reduce down till it becomes sticky.
    Cover your chicken or beef skewers with the mix & stick on the BBQ.
    The sauce can keep in the fridge (air-locked container) for a couple of weeks also.

    If you can find this brand cholimex their a Vietnamese company, they do fantastic marinades for meat/fish .... I brought home loads of jars while on my travels there, one of the better BBQ marinades I've tasted

    Juice of half a lime, big dash soy sauce, squeeze of garlic, some chilli flakes. Into a bag with some chicken bits for 8h in the fridge (sometimes i add ground ginger if i remember)
