Help recreate this GF bread recipe

    So I bought the McCambridge Gluten Free vegan bread tin thing and gave it a go and my OH really liked it, but it's too expensive to buy on the regular so I'm trying to replicate something similar myself.

    The ingredients listed are:

    • Gluten Free Oatmeal
    • Pea Flour
    • Gluten Free Oatflakes
    • Gluten Free Oat Flour
    • Raising Agent: Sodium Bicarbonate,
    • Coconut Sugar, Salt.

    Anyone want to hazard a guess as to the quantities of each? :) I'll be happy to bake any suggestions and report back the results. I bake a fair amount of loaves, but none are GF & Vegan so using pea flour etc is all new to me. Any suggestions appreciated. Thanks!

    their website seems to be missing Buttermilk, but its stated on the Tesco website. It wouldn't be vegan if there is buttermilk in it

    Yes I'll be using a plant based vegan alternative to buttermilk - on the tin it states you can use any milk substitute you desire, and I've used Soy & Oat mylks and both worked fine. I'm well aware of what is and isn't vegan, thanks :D

    Anyway, any ideas on the quantities as mentioned?

    I can only suggest on the Bicarb , a teaspoon should be fine , if you put too much in you start getting a metallic taste. There seem to be a lot of recipes for oatmeal breads so I assume that its the main ingredient , pure guess but 1/3 pea flour (I have never used this though) and 2/3 the other oats , the other ingredient a pinch of salt and maybe a tablespoon of the sugar.

    Ive not seen a bread recipe use pea flour, I am planning to make a chick pea flour bread next weekend

    Thanks. Never used pea flour myself either. I have some chickpea flour here too. Maybe I'll make a few and see which turns out best :)
