what to do with suet?

    Was down the local butchers (the ever excellent Bradys of Fairview) and asked for some suet. As I had a hankering for suet crust pastry and memories of dinky Atora packet.
    Came back with a carrier bags worth of fat carved off the carcass.
    Being one who can't resist free stuff + likes to kid on I know what I'm doing, I nodded sagely when told to freeze what I didn't use and accepted said bag of fat.

    So now what do I do?
    Thinking either try and mince it or render it down.
    Any advice?
