You need some proper diagnostics done

I have an awful feeling that changing the coolant temperature sensor is half my problem

Why would you think that? Is the temperature gauge acting strangely? You need to fix the leak in the exhaust and get the lambda reading back to 1.00, then the fun begins!!

From what I’m told the engine isn’t getting enough air at low idle

Or too much fuel.... You really need to get it diagnosed first, that will give you somewhere to start from.

Did it say heater circuit open? this wont affect emissions but should have your engine light on

How good was the diagnostic system? Typically you will see heater circuit open but not the actual control side

I think time for a proper mechanic and diagnostic system. Id be 90% sure its only your heater circuit there which means you do need a new sensor but wont affect emissions.

a lambda sensor has 2 sides, a control side and a heater side and if its only the heater side thats failed then once the car is warm it wont affect your emissions in any way. Its hard to say on the internet whether your control side is bad of course, I'm only going from the data you provided

The best thing to do is let the mechanic sort it out. Although the jobs list you have given there is quite costly.... 2 sensors alone are over 350 euro

Quiet high HC reading at idle, so between that and high CO, it's an incomplete burn from either too little air or too much fuel.

First thing I'd do is a decent service and check the coolant sensor.

It could be something as simple as a leaking injector causing over fuelling so at idle it's running rich and at high revs the leak is not as relavent.

Easiest way to check is let it idle for a few mins then remove each plug, if any are wet, there is your problem
