I know this is probably done to death. I have a wedding coming up this weekend, I'm just a random guest. Would it be ok to wear a suit jacket with a shirt and a waistcoat and skinny jeans and boots? and ideas or colours would be welcome

Skinny jeans and boots would not be appropriate (assuming you are an adult?) . A slim fit suit with skinny tie would be nice

Any kind of jeans is usually too informal for a wedding.

But, it is a party after all; variations on suits can be worn.

I sang at a wedding once where a (male) guest appeared in church in a pink suit, with a black shirt, black pocket-square, and pink tie.
Looked totally razzle-dazzle, by the way, and didn't even upstage the wedding couple - it was quite a glamorous wedding.

You needn't go quite that far, lol - but you should aim to look as if you've made some effort to dress up for the occasion.
