Per the title, we have a 2 storey 1980s house with large windows thats gutted - no flooring, fixturing, units, kitchen etc.

With the blank slate we have the can fully style the house. We also have the option to knock some walls and modernise the living spaces.

Ideally I'd like to get both an architect and a interior designer, but with the lack of any exterior wall changes architects seem expensive and some of them have no interest.

Would an interior designer suit better here?
    Or some other profession?

    Are the walls structural?
If so, then neither of the above. You need an Engineer.

Structural engineer has already surveyed the house and detailed all.
Once Architect/Interior designer has proposed changes the structural engineer will review and sign off all works.

Ok. Architect will design the layout and flow of the house.
Interior designer will help with colors, styles and current fashion trends.

Also more importantly than colour schemes and the like which can be changed cheaply with changing fashion trends. Get an good architect to advise on insulating the house properly since the house is striped back

    +1
Do stuff now that can be done cheaper than in 5 years time.
Put that large structural ope for the door in now and get a cheaper kitchen that can be changed easily now.
Add the insulation and air tightness detail that cannot be done later.
Change pipes/wiring now that is exposed.
