Being paid in 2018 for work that was done in 2017 (hypothetical question)

Imagine a scenario whereby an employee gets their P20 for the previous year and the manager tells that employee that the weekend work they did should have earned a €250 premium bonus that they forgot to apply to the payslip at the time.

If the manager retrospectively pays that employee, what would happen? They P20 is already generated for that year and as far as I know, you can'y pay in FY18 for work done in FY17.

In a similar situation, an employee is grossly overpaid in their final payslip of 2017. They are overpaid by €500 for one month's salary. This goes unreported (whether through ignorance or design of the employee). The manager now seeks this money back (as is their right). What happens? Since they have already been taxed according to that amount of money that they were allegedly paid. If they pay back the €500 to the company will revenue return the amount of money that they were taxed for that €500?
