Driving licence renewal

I need to renew my provisional licence. I'm on my third renewal and I need to include proof I've booked a test.

I had booked a test in December, but pushed it back to mid-April because at the time I'm not ready for the full test. I never received an email with an exact date, it was all over the phone. I do have an email stating that the test was cancelled, and "Your application is still valid and another test appointment will be issued to you in due course."

Can I include that in the renewal letter, or do I need an exact date/time?

Any proof at all that you have the test booking will do as long as it has your booking number and name. You should have received an email confirmation when you applied so you could print either communication you have from them no problem. The fact that a date hasn't been issued to you yet won't be a problem in the slightest.
