Firstly I have seen the answer before on here but i but cant seem to find it.
The water going into the tank in the attic gets noisy when its being replenished. Is there a fitting for the ballcock as I can hear the water going in or is there a different type I can get that makes it quieter?

You dont need to change the ballcock. Just fit a tap/valve on the water supply and turn down the flow until its quiet enough.

The tank doesn't need to be filled fast. As long as it gets in as much as goes out over a 24 hour period.

The FluidMaster Pro75 B should sort out your problems.
