I have a small Nestor Martin Harmony 1.
It’s an absolute powerhouse. I love it.
However, on the advice of a friend I tried coal in it and was even more impressed.
    I am curious though.
The air inlet knob thing is supposed to be in the middle to light, then pushed fully to the top for wood burning or pushed fully to the bottom for coal burning.
What do you do if you have a bed full of coal and place wood on top, presumably pushed down for coal?

Also, when the secondary air dial is turned to zero (or whatever it is where I can’t push it any further) should the flames die down altogether? They do die down considerably but will still flame happily for quite some time. I’m just wondering if there’s too much air getting to it for some reason even with everything ‘closed’.

No, you should never burn coal and wood together. Separately only if a multi fuel stove.
