On page one, I put: Current speed, current heart rate, current cadence, distance and elapsed time.
On page two, I put: Current speed, average speed, time of day, max. speed and temperature.
On page three, I put: Current speed, grade, elevation and total ascent.
On page four, I have map.
That's pretty much all I need.

    Mine looks sometihng like this
       +---------------------------+
       | Time |
       | |
       +---------------------------+
       | Speed |
       | |
       +---------------------------+
       | Distance | Avg Speed |
       | | |
       +---------------------------+
       | Grade | Totl. Ascent|
       | | |
       +---------------------------+
       | Time of Day | Heart Rate |
       | | |
       +---------------------------+

Then I have a second screen has the same fields* for the current lap, so If I hit the split button it will reset the values, I sometime use this on a ride that is part with a group and part solo.

On the 3rd and 4th screen I have the map and elevation profile but I almost never use them.

*except Total Ascent, I don't think there is a lap version of this field ;-(

For me : speed, time, avg speed, distance, time of day, temperature.

I also have gradient but tbh now that you remind me i will remove it. The above are the only data fields i actually care about. I don't wear a heart rate monitor.

Mine are in the photo attached. I used to use other fields on other pages but I don't bother anymore. I also used to use a map page but it just ate the battery life.
