Does anyone else find this a real struggle?

I need a new role and to leave my current company (stuck in a professional rut) but very busy every day and finding it a challenge to look for jobs, contact recruiters, apply and so on.

And while I haven't got to this stage yet but getting holidays with little notice may be hard for me so assume I will need to take sick days for interviews. This will cause its own issues.

Any advice on how to succeed at this would be helpful.

Try and arrange interviews before/after work, some recruitors might understand that you're working.

You wouldn’t need to take a full sick day. If you can ask for an early morning or late afternoon interview you could make something up about dental appointment or similar and offer to work late another day to make up time. Where I work people are always coming and going with dentist/school meeting/Physio etc so it wouldn’t stand out as strange.

Look for jobs in the evening/Weekends through Irishjbos.ie etc. Most recruiters will see you outside regular hours. This is normal for them. Some companies will see you outside regular hours, although this is less common.
