Amsterdam - Bruges summer time

Hi I am looking for ideas for a 10 day trip to Holland and Belgium.
I have seen good value flights to Amsterdam and we are interested in walking cycling pretty towns with pubs and restaurants .
I have been looking at boat and cycling holidays but have no idea about what they are like.
Has anyone done these type of holidays?
I like flat cycling 40 km approx a day so not tough routes , more leisure cycling.
I would also think of doing 2 locations ,1 in Holland and hire bikes and just do a few routes ourselves and then probably Bruges for the other 5 days.
We are a couple in our 50s who like an active holiday with some nice food in the evening.
Any thoughts or ideas .
We will travel end of June.

I have only ever done a 1 hour cruise in Brussels (very pleasant) with them, so can not give first hand experience feedback.
