Just wondering if anyone replaced stock halogen bulbs ( H7 ) with a better model and it made a difference ?

not sure what bulbs come in a skoda fabia 2015 , but they do not seem very bright .

bit of a wild ride on low beams in the dark of the country side ...

main beams not so bad , also could be better though .

Osram nightbreakers line or philips etremevision bulbs are what you are looking for. Also check headlight alignment in a garage to ensure it isn't lowered down excessively to pass NCT. I had a 07 fabia and headligths were perfectly fine for a halogen.

Fabia comes with two types of headlights - regular and projections (as option). Surprisingly, the in this application the first are performing better.

Projector style don't work well at all unless they are xenon.

    Are the headlamps clouded?

If they are gone cloudy then they need a compound and polish with a machine or there are repair kits.

slightly off topic but found the H7 bulbs in LIDL pretty good and durable .
Was replacing a h7 every 6 months using motor factor - halfords stock .. the LIDL ones have lasted 2 years so far

If you are thinking of something like Night breakers, these are worth considering. I ordered these recently and find them pretty good. I find them better than the Night breakers I had before. https://www.motorparts.ie/product/accessories-car-bulbs-performance-bulbs/ring-130-h7twin-pack-u1185424/U1185424

We have used Ring, Osram and Philips and we find the +130% version of the Philips X-treme Vision best of the lot. We fit a lot of them and they last well and make a huge difference to light output.
