Anybody ever produce rosé veal?

    Only ever did it for the freezer, never at a commercial level.

    Only ever did it for the freezer, never at a commercial level.

    As far as I know, there's a family in Kilkenny that do it.

    Hi Ya

    Did it for years
    Bought in all the calves you want to get a cheapish source under 100 euro holstein are best as the get high quick.
    Twice a day milk for 4 wks or an automatic feeder.
    Start to wean off milk as soon as they are eating 1kg of meal.
    Calves do well on stray or dust up to 12 weeks then onto slatts
    Meal ad lib and either straw hay or maize until 11 months then kill weight should be 450 to 500 kg live I might add
    At €4.30 a kg you should hit 1k per animal but your costs will be high.
    You need to vaccinate for phnuemonia and scour.

    I was loading out straw to a regular customer a couple of weeks ago and he was telling me about rosé veal that he produces on contract. Calves must be purebred beef breeds and average €350/hd. They also must have a specified minimum amount of space for movement, and on straw bedding.
    From 60days old they’re on adlib milk, feed and hay. At 5-6 months old they’re slaughtered. Average payment per head for 2017 was €1270....

    Ah yeah but your talking about France there lad.

    They get fair pay for their goods and most farms are purebred not the rubbish thats produced on dairy farms here.

    Did it 'accidently' a few years back, calf got injured. AFAIK there is still a roast in the freezer, will I post it over to you?:D
    It'll be thawed by the time it gets to you. It would be a challenge for any michelin chef to make a meal out of this, utterly tasteless, we hung it for too long which didn't help it either.

    If the seat's wet, sit on yer hat, a cool head is better than a wet ar5e.

    How long is too long? Thought too short was the common issue!

    I think it was 21 days, but because the carcase was small, with little fat cover I think it had the effect of being hung for longer IYKWIM.

    Seen this in France with charolais which are suckled twice a day and given a raw egg and rice and in the dark and is white meat,
    Rose veal is under 12 month and Slaney use to have fellas in Wexford and Carlow doing it on contract with a very small margin.
