    I think that it might be tough to find a no alcohol substitute for rum, but I reckon you could add some coffee instead.

    Lots of chocolate recipes use coffee or espresso to give chocolate that extra edge

    Didn't realise rum essence even existed but I guess they've everything now.

    Yes, it's quite potent stuff too flavour wise, much stronger than real rum, so don't be tempted to overdo it. In the original recipe there was 5 tbsp of rum, so you'll need to make up the total liquid content to that level as you'll be needing nowhere that much essence. Now I'm not sure how much you need to use per tbsp of real rum, hopefully it will say on the bottle otherwise just Google it.
