Windows 7 Backup Question

Just bought an external HDD and am looking to save all my files on my PC to it and wipe the computer so it can be solely used for a specific purpose. If I use windows backup to backup my files will it be easy to access them from the HDD? As in that I can just go onto it to open them? I don`t want to only be able to access them if I need to restore my PC if that makes sense.

Sorry if this question isn`t very clear, quite hard to put into words haha :)
