Hi, I just got offered a job in Ashbourne. Does anyone know of any bus/train from Galway to Meath?

    No.

    Check www.a-b.ie

But your best best is probably an express Galway to Dublin eg gobus or citylink.ie amd then ... i think its Dublin bus 103 or 109. I seem to remember it taking an hour. Theres something called the ashbourne connector too which might be better.

Loads of bimuses from Galway to Enfield. Not sure it that helps you though. Enfield is a good 45 mins to Ashbourne if not longer.
