It's going to be expensive. These were more expensive in the UK than they were here new. Any reason you're not going for the BEV? Although these are also expensive. Would cost almost as much to import a second hand 2016/2017 one as to order a brand new 2018 model here.

    yeouwch!!

Have a BEV leaf, and a prius, its time to replace the 2007 prius. I would love to go with full BEV for both cars but the odd trip to London and Cork introduces a range issue. I figured the best bridge until the range catches up is go PHEV for one vehicle.

The PHEV ioniq will happly work in BEV mode for 90% of its life around Galway but when the long trips come with kids etc just need the option ICE.

Or I just wait a few years for 60kw leaf

I assume you are talking about importing one of these new? If so you will may not save anything or even end up paying more than you would here.
If you can wait 6 months and pick up one second hand then you will save on the VRT.
Have you considered a 2nd hand BMW 330E PHEV? I looked at bring one back from the UK ( 2016 <10k miles)and worked out I could have one on the road here for about 27k.

If I was going Hybrid I would go with Outlander.....

I just don't see the point of Ioniq hybrid.

BEV should do Galway to Cork (206km) on a single charge if you take it handy - it's mostly 100km/h speed limits anyway, isn't it? Or drive well over the speed limits the longer route via the M8 and stop at the Limerick fast charger for 15 minutes :D

To London is of course more of an issue. But there are people in the UK putting up huge miles on Ioniq all over the place with no issue. Do you drive to London very regularly or just the odd time maybe once or twice a year? If the latter, I would still consider the BEV. The savings will be substantial and you'll have a far superior car. Did you take one for a 24h test drive?
