    Can someone explain to me how the black background on the photos is achieved.?

    I don't know how anyone else did it, but in the photo of the flamingo it was entirely processed in Lightroom.
    I converted the colour image to black and white, then brought the exposure down until the background was black and then brought up the whites until I was happy with the exposure on the bird.
    With an adjustment brush I went around the bird to kill off any remaining background.
    After that it was just a matter of various adjustment brushes until I was happy with the result.
    It's very easy to do in Lightroom, I don't know if you have access to it or not but it's a very powerful tool
