I have to change the washer on a tap at home . the seat is heavily scored. it feels like a large score. could be 2-3mm deep
there is a lot of pipes, wastes, and softener in the way so if I could reseat it it would help a lot of time.

I was going to put 1/4 turn valves in but I don't think these will work If I lower the seat a lot.

    how deep can I go

If it's on a cold mains at the kitchen sink then you can go as low as you want cause you'll never fix it. Change the tap.
