Have you flown long haul with the tot before? Key is just preparation, snacks, toys, iPad, distractions basically.
Virgin economy class is pretty standard transatlantic economy, very nice crew, decent entertainment, food etc.

Flew virgin transatlantic in may with a toddler. Very impressed with virgin. Great with kids.

I found them to be very good. However the flight is packed with families and kids so the noise level can be high, the crew can be very busy. But they are good to fly with. Good IFE which helps with the tots.
Transfer in LGW is pretty easy too, fly EI to LGW then get on the Virgin Atlantic bus as soon as you get off.
From an aircraft POV it's nice to be on a B747 again, prob for the last time for me.

Not flown with Virgin, flown BA. It won't be fun but with the correct prep you can make it bareable to good. Board last not first to reduce time spent onboard. If you have a tablet load it with fun stuff for them plus some new unused apps they may like. Bring a small backpack with stuff purely for them, buy new cheap stuff from the pound store and every hour or so break out something new for them to open and play with. Our lad was more content with watching the map not the actual films. Coming back will be worse as they will likely be overtired and take longer to give in. The flight will be all about survival so don't expect to enjoy it yourself. If watching something yourself you won't get to concentrate so load your own tablet with short stuff 20-30 min episode. Personally I'll load it with sport.

Best of luck and remember the end really will be worth all the grief and stress building up to it.
