Are emails binding?

    Having issues where someone is saying that a bill agreed to be paid for by a previous employee is not binding. and the invoice and license agreement mean nothing as he didn't sign it.
    The email has the person saying we have agreed to pay what ever and it came from their own business account.

    and electronic signatures which was the main one. Someone is just trying to get out of paying for something
