what kind of wood would you use to make the panels ?
I guess normal MDF wouldnt be a good idea ?
Would it have to be marine ply ?

Mdf should be fine provided the walls are not already damp, just make sure it's properly painted and sealed with oil based paint preferably, if the floor is wet a lot of the time you could use wood for the plinth

moisture resistant mdf should be pretty good
its not too dear either . about 30 euro for 18mm
keep it up 10mm if you can design it that way and put the outside slip to the ground
