    In the old analogue days, every station needed it's own broadcasting frequency which soon uses up all the available spots. With digital it is possible to combine (multiplex) several stations into one digital frequency. Saorview for example uses two multiplexed signals to fit all it's content, radio and tv, with room to spare. That is why you only need to tune two frequencies to get the full range of channels. With satellite they use a similar principal to fit all the channels in. A transponder is the device on the satellite that sends any particular frequency or group of channels.
    As for why they change occasionally... Sometimes it is to rationalise the TP with the best fit of channels, radio, tv and data, for maximum efficiency. In recent months some have changed from transponders that cover all of Europe to ones specifically aimed at the UK to facilitate a change from encrypted to FTA for rights purposes. Other times they change 'cause it's the will of the gods :)
