We were using Symantec Endpoint on the server VMs, and we don't bother putting any AV on the host.

I use ESET File Security - https://www.eset.ie/ie/business/server-antivirus/file-security-windows/

Symantec is good too, updated definitions but uses more system resources in my experience.
