Old Pipes valves in bathroom

    Hi.
    We just moved into an old house and are planning to get work done in the baths and refurbish them.
    I notice the attached pipe values in the bath next to the wc. Does any one what are they meant for and how to remove them if i am changing the bathrooms.
    Are they fo4 cold water from the tanks ?

    Old shut off gate valve. Notorious for breaking when shut off due to age.
    Replace with leaver ball valve in appropriate location, ether in hotpress or attic.
    Your plumber will advise.
