Contracts Pending - Builder wants to get internal fitting done

Hi, went Sale Agreed on a new build last Tuesday and are still awaiting contracts from vendor's solicitors. Site foreman hoping to meet me on Friday as I have to order the doors I want, bathroom tiles and kitchen as they come as part of the purchase. Do people actually order this stuff without having contracts signed as my natural inclination would be to wait until contracts are signed by both sides? Ideally I would like to get my tiling done in kitchen before the kitchen goes in but I do not want to spend money putting tiles down in a kitchen when the reality is the Builder could pull the plug if he so desired.
Do people actually do this ordering / get fitting work completed internally whilst contracts are pending? Or am I overthinking this and this happens regularly as I am uneasy at the thoughts of committing to anything until I am 100% sure the house is mine.
