Tramore or any other choice of beaches
Suir valley railway is good trip for 3 year old
The greenway, rent bikes with trailer for child.
Walk around mount congreve gardens lovely couple hours too.

Number 9 bistro in George's court good for kids eating, adult food good too.plenty of other restaurants too.

There are some good museums and a new Viking virtual reality thing in city, not much fun for a3 year old though to be fair.

    ADD...
I forgot this weekend is Spraoi weekend, you pretty much picked the best weekend of the year to visit, loads of free street entertainment, you won't leave city centre...loads to see,99% free, pick up a free brochure for festival in hotel, cafe, pub and take your pick..enjoy.advise, pick an act from line up, get their 5 minutes early so you can get child in front of crowd.it does be busy, especially if word goes around of something brilliant or very kid friendly, lots of family stuff though so if you don't see something, see something else or catch them next time.

Second that. So lucky to be in the city for the Spraoi festival. As Max said, get a brochure, go off wandering and enjoy the free entertainment. Some acts are just brilliant, especially for kids.
